Makes 4 servings (125 ml each).

  1. Spread each bread slice with 5 ml butter or margarine, then cut in cubes (1 to 1.5 cm).
  2. Combine 75 ml sugar and cinnamon.
  3. Cut fresh rhubarb in 3 cm pieces.
  4. In a greased 1 l baking dish, layer half of rhubarb, bread cubes and sugar mixture.
  5. Repeat each layer.
  6. Dot with 15 ml butter or margarine and sprinkle with 5 ml sugar.
  7. Cover and bake 15 minutes at l90­°C (375°F).
  8. Uncover and bake 15 minutes more.
