  1. Preheat oven to 350°F.
  2. Coat a 9x13-inch baking pan with non-stick cooking spray.
  3. Beat eggs, salt, sugar and vanilla in large bowl.
  4. Stir in flour, soda and cinnamon.
  5. Add applesauce, rhubarb and nuts; stir until well blended.
  6. Pour into prepared pan and bake for 1 hour.
  7. Cool; dust with powdered sugar.
