Ingredients[]

Filling[]

  • 5 tbsp flour
  • ¼ tsp salt
  • 1½ cups sugar
  • 4 cups rhubarb (2 lbs), cut in 1 inch pieces

Directions[]

  1. Melt butter gently.
  2. Meanwhile, mix sugar, baking soda, and flour.
  3. Add butter and crumble.
  4. Divide in half and press ½ out to line bottom of 9 inch square pan.

Filling[]

  1. Combine ingredients, except rhubarb.
  2. When mixed, pour over rhubarb and toss to coat well.
  3. Place in pan with crumb crust and sprinkle remaining crust on top.
  4. Bake 1 hour in preheated 350°F oven.
  5. Sprinkle with confectioners' sugar and cut in squares and serve.
  6. May be served with ice cream.
