A yummy fudgy-minty brownie that's sure to be a hit with everyone. Makes 25 brownies.

Irish Mist Brownies

Icing[]

  • 2 cups powdered sugar
  • 3 tablespoons butter, softened
  • 1 x 3-oz package cream cheese, softened
  • ½ teaspoon peppermint extract
  • 5 drops green food coloring
  • 2 drops yellow food coloring

Directions[]

  1. Preheat oven to 350°F (175°C).
  2. In a saucepan, melt butter and 2 squares chocolate over medium heat.
  3. Stir constantly for 4–5 minutes or until smooth.
  4. Add and stir in the rest of brownie ingredients.
  5. Mix well.
  6. Spread mixture in a greased 9-inch square baking pan.
  7. Bake for 25 – 30 minutes or until brown is pulling away from the sides of the pan.
  8. Cool.
  9. In mixer bowl, mix all icing ingredients except the chocolate.
  10. Beat at medium speed until mixture has creamy consistency.
  11. Spread over cooled brownie.
  12. Drizzle with melted chocolate.
  13. Cut into bars and store in fridge.
