Ingredients[]

  • Mazola no-stick cooking spray
  • ⅓ cup brown sugar
  • 2 tbsp Karo dark corn syrup
  • 1 tbsp lemon juice
  • 16 oz canned pears

Fat-free Spice Cake[]

Directions[]

  1. Spray 9-inch round layer cake pan with cooking spray.
  2. Add brown sugar, corn syrup and lemon juice; stir to combine.
  3. Place pan in 350°F.
  4. Oven for 3 minutes.
  5. Remove.
  6. Arrange pear halves, rounded sides down, over melted brown sugar mixture.

Fat-free Spice Cake batter[]

  1. In large bowl combine flour, corn starch, baking powder, salt, cinnamon, ginger and nutmeg.
  2. In medium bowl, using a fork or wire whisk, stir sugar and milk until sugar is almost dissolved.
  3. Add egg whites, corn syrup and vanilla; stir until blended.
  4. Gradually add to flour mixture; stir until smooth.

Assembly[]

  1. Carefully spoon batter over pears, smoothing top.
  2. Bake 35 to 40 minutes or until toothpick inserted in center comes out clean (do not underbake).
  3. Immediately run spatula around edge of pan and invert cake onto serving plate.
