I came up with this recipe for a friend who wanted to make a birthday cake for her husband, who loves chocolate chip cookies. The goal was to have a texture more like cake than traditional cookie bars, but still keep the cookie taste.


  • ½ cup unsalted butter (softened)
  • 1 cup plus 2 tbs sugar
  • ½ cup brown sugar
  • ½ cup peanut butter
  • 4 eggs (separated)
  • 1½ tsp vanilla
  • ¼ cup dark rum
  • 2⅓ cups pastry or all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 12 oz bittersweet chocolate chips


  1. Preheat oven to 350°F.
  2. Grease and flour a 12 inch square baking pan.
  3. Cream together butter, 1 cup sugar, and ½ cup brown sugar.
  4. Add peanut butter, egg yolks, vanilla, and rum.
  5. Beat well.
  6. In separate bowl, whisk together flour, baking powder, and salt.
  7. Add in batches to wet ingredients until just combined.
  8. Beat egg whites until opaque.
  9. Gradually add remaining 2 tbs sugar while continuing to beat until stiff.
  10. Mix ¼ of egg whites into batter and combine well (the whites will deflate).
  11. Gently fold in remaining whites and chocolate chips.
  12. Bake for 40-50 minutes, until toothpick comes out clean.
